Believe it or not, but I am the only one in my family that likes quiche! I would make it all the time for dinner/brunch, but sadly that’s not the case.
So, I decided to make my own quiche for one! I used 1 oz. of leftover pizza dough as my crust on the bottom.
I rolled that out and put it in a ramekin, and baked the dough for about 5 minutes at 375 degrees.
Then on top of the dough, I put 1 slice of bacon, chopped, 1 oz. of feta cheese, and poured on 1 egg + 2 egg whites which were whisked together with chopped green onions.
Bake for another 25 minutes or so or until it looks set and is browned.
This whole quiche is only 225 calories too!!
