Pumpkin Cranberry Muffins – Muffin of the Week

I have been looking for this recipe for almost 7 years!  When my daughter was a baby, she was born November 14th, I was off work, and unlike my other two boys, she slept all the time as a newborn.  I have vivid memories of her sleeping in her carrier while I was cooking and baking in the kitchen.  One recipe I made I got from the weight watchers bulletin board and it was for pumpkin cranberry muffins.  The combination of the sweetness of the pumpkin and the tartness of the cranberry, it was awesome!  I somehow lost the recipe, I’ve tried to recreate in unsuccessfully over the years, I’ve even made recipes from other peoples sites, but it was never the same.  Fast forward to yesterday as I was leafing through a magazine, there was an advertisement for Ziploc bags, and on the advertisement was a few recipes, one of which was for pumpkin-cranberry muffins!  Could it be the recipe I was looking for?  I had all the ingredients already, so I decided then and there to make a batch.  I was very happy and elated when they tasted like the original muffins that I made so long ago.  So, I have to share the recipe with you!

  • 1 1/2 cups all purpose flour
  • 1 tsp. baking soda
  • 3/4 tsp. ground ginger
  • 1/2 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1/4 tsp. salt
  • 1/8 tsp. ground cloves
  • 1 cup granulated sugar
  • 1 cup canned pumpkin
  • 1/2 cup low-fat buttermilk
  • 1/4 cup light brown sugar
  • 2 TB. canola oil
  • 1 large egg
  • 2/3 cup chopped cranberries

Preheat oven to 375.  Combine flour through cloves, stir well with a whisk.

Combine sugar through egg in a large bowl. beat with a mixer until well blended.  Add flour mixture to sugar mixture. beat at low speed until combined, then fold in the cranberries. 

Place 12 muffin cups in a muffin tin, coat liners with cooking spray.  Cook for about 25 minutes.  Remove muffins from pan and place on a wire rack. AND, I figured out the nutritional info:  Each muffin is 168 calories, 3 fat and 1.6 fiber!!

    I found your blog through google because I was looking to make cranberry muffins – but I had leftover fresh pumpkin puree from making pumpkin pie, so this was perfect! Thanks for the recipe! The muffins are delicious!
