Muffin of the Week – Low Fat Peanut Butter Choc. Chip!

 These muffins make me very happy!  As I’ve said before, the allure of the bakery by my house to get a muffin before work was very strong.  It would get to the point where I would say to myself, if there is a parking space in front, I’ll go in, but if there isn’t, I’ll just go to work.  Sometimes that worked, and mostly it didn’t because there was always a space for me to park!  I wanted to make big muffins for me that wouldn’t be half of my daily calories for the day.  Once I found out how many calories are in an average bakery muffin (between 700-800 calories), it was no wonder why I was overweight, because not only would I get that muffin, but usually it came with hot chocolate, then I would eat lunch and dinner and snacks!! These muffins are moist and peanuty and fantastic.  

  •  3/4 cup whole wheat flour
  • 1/4 cup all purpose flour
  • 1 cup oats (I used red mill brand)
  • 1 1/2 tsp. baking powder
  • 1/4 tsp salt
  • 3/4 cup skim milk
  • 1/3 cup honey*  (I didn’t have honey, so I left it out)
  • 3 tablespoons applesauce
  • 1/3 cup peanut butter
  • 1 egg
  • 1/4 cup chocolate chips

Makes 6 jumbo muffins.  Each muffin is 324 calories, 11.4 fat and 5.9 fiber. I got this recipe from a web site that doesn’t seem to be active anymore, she hasn’t posted anything since January, but the site is www.cookingdonelight.com .  One thing I did do was re-check the calories using www.calorieking.com  and the nutritional value was a little bit more than listed on her site.  I think its always good to double check so you are not underestimating, or overestimating you calories! I hope you like them as much as my family does!
