Kicked up Noodle Soup + Heart Health Silk Soy Milk! – free coupon to try for 3 lucky readers!

Last week Christina posted a recipe using the noodles of ramen noodles to make her own soup that was more nutritious as well as quick and easy.

That was the inspiration of my soup today. I’ve been sick the last few days and nothing makes you feel better than a nice bowl of soup!

This soup serves 2. Each serving is 150 calories. Or, if its your whole meal, have the whole bowl!

Ingredients:

10 cauliflower florets
3 cups of water
2-3 tsp. chicken stock base
2 carrots, peeled and cut in half
1 huge chunk of garlic
splash of crushed red pepper flakes
1/4 of a red onion
1 tsp. of olive oil
1 tsp. Saigon sizzle stir fry sauce
10 pea pods, ends trimmed and sliced

Directions:

In a large pot, add the olive oil and onion and garlic and stir for a few minutes. Add the 2 carrots, the cauliflower and 3 cups of water. Add 2 tsp. of chicken base (or you can use 3 cups of chicken broth from a can or carton). I sprinkled the crushed red pepper flakes in at this point too. Bring to a boil and simmer until the veggies are soft.

After it was cooked, I put it in the blender and pureed until smooth.

Put the pureed soup back into the pot. I added 1 oz. of noodles and the sliced pea pods and cooked for about 5 minutes on low until the pasta was done. I got this bag from the ethnic grocery store by my house. I liked the way the package looked!

The last step is to drizzle the stir fry sauce in ( I used a teaspoon or two) and stir. It turned out creamy, spicy, and fantastic but it also made me feel so much better!!

  2. That Saigon sizzle sauce sounds like a fun addition. Maybe it’ll be at a nearby Asian market. Never seen it in the grocery store.

    I love soup when I’m feeling sick and also noodles too. My mom used to bring me plain, buttered noodles so that has a comfort feel to me. This would be perfect – the best of both worlds!

    And I’ve never tried Silk. I like that it’s Vanilla flavored, as I’m not really a milk fan, but sometimes you just WANT some w/ a warm cookie. I think I’d like that!

    I’ve never tried Silk milk before…I LOVE soup when I’m sick…especially with a sore throat/cough like I had last week. MMMmm. This recipe sounds great and looks delicious. I might have to try it!
