Homemade pretzel rolls

Have you noticed how popular pretzel buns/rolls/bagels have become lately? I was searching for recipes and based on reading different recipes and comments, I came up with this one. I love how recipes come out great the first time. This made 8 BIG rolls – each roll is 299 calories 2 grams of fat, which seems like a lot, but even if you made a sandwhich out of it for lunch, it still can be in your healthy eating plan.

2 packets of yeast
1 3/4 cups warm water
4.5 cups all purpose flour
1.5 tsp. table salt
1/4 cups sugar
Sea salt for sprinkling on top before baking

For dipping before baking

In a small sauce pan, heat 2 cups of water with 1/4 cup baking soda. Bring to a boil, then turn off.

In a mixer, add the warm water and yeast packets and let that rest for 5 minutes. Next add the flour, a little at a time with the salt and sugar and mix with a dough hook for about 5 minutes.

Lightly oil the bread and leave with a cloth draped over for 1 hour. It will double in size.

Then, just punch down the dough, divide into 8 different parts, roll it into a dough shape. Before placing on a greased cookie sheet, dip each dough roll into the water/baking soda. Sprinkle with sea salt. This helps brown the bread.

Bake at 450 degrees (preheated oven) for 12 minutes, or until well browned.

I couldn’t believe how deluxe these came out. We all had one out of the oven, then I had one with a fried egg/turkey for breakfast this morning. So good!
