Greek Quina and Avacodos

What a busy weekend! I didn’t go on-line at all! But I wanted to share a great recipe I found from Fitness Magazine. I wasn’t able to download my pics because as I was downloading them, I have no more space on my computer!

Maybe it has something to do with the 8,000 pictures I have stored on it! So, tonight, I am going to have to delete a bunch of stuff I don’t need so I can keep downloading more pictures!

This is a super easy recipe, great for a picnic or a great side when grilling out.

Greek Quinoa and Avocados
Makes: 4 servings

Ingredients
1/2 cup uncooked quinoa
1 cup water
2 Roma (plum) tomatoes, seeded and finely chopped (I omitted that, no chunks of tomatoes for me!)
1/2 cup shredded fresh spinach
1/3 cup finely chopped red onion
2 tablespoons lemon juice
2 tablespoons olive oil
1/2 teaspoon salt
Spinach leaves
2 avocados, pitted, peeled, and sliced
1/3 cup crumbled feta cheese

Directions
1. Bring quinoa and water to a boil in a small saucepan. Reduce heat; cover and simmer for 15 minutes, or until liquid is absorbed.
2. In a medium bowl, stir together quinoa, tomatoes, spinach, and onion.
3. In a small bowl, whisk together lemon juice, oil, and salt. Mix with quinoa.
4. Place spinach on plates with avocado slices and quinoa. Sprinkle with feta.

Nutrition facts per serving: 332 calories, 7g protein, 27g carbohydrate, 24g fat (5g saturated), 8g fiber

    Do you have a CD burner? You could burn your folders onto discs and label them that way. Just pull out a disc and load it up if you want to see those pics, but not use the room on your computer!

    I’ve never tried Quinoa before, yet I have been seeing it pop up in so many recipes I come across. I am thinking it may be something worth trying! Thanks for the recipe :-)

    Also, with Christina’s suggestion, you can also get a flash drive or an external hard drive to hold all your photos and other documents. It definitely helps with having your computer run faster and you can keep some free space open for other things. I don’t know what I’d do with out them!

    Avocado is one of my favorite things that I definitely don’t eat enough of and quinoa is something that I always have on hand, so this is definitely bookmarked. I would add some chicken to this for a great dinner salad.

    This looks great–I’ve been looking for new quinoa recipes because I’ve only made it a couple times before. I bet it’s nice with the creamy avo!

    This recipe sounds fabulous! Quinoa and avocado…two superfoods!! I can’t wait to make this recipe for dinner. I love healthy, delicious meals. Sorry that I’ve been an absent commenter; I just finished up my law school exams and am finally getting around to my google reader.
