Crock pot salsa chicken

I love making things that are super simple. I use my crock pot all year round, but in the summer it can be used even more so you don’t have to heat up your kitchen with a hot oven. I make this before I go to work, turn it on, and when I get home dinner is ready!
- 4 chicken breast halves – I’ve thrown them in frozen too!
- 1 large jar of your favorite salsa – I love Paul Newman’s medium chunky salsa
- 1/2 can of chicken broth
- 1 tsp. cumin
- salt and pepper to taste
Basically, put the chicken in your crock pot, pour the salsa on top, add the salt and pepper and cumin and the chicken broth. Cover and cook on low for 8 hours. The best thing about this is that you can’t over cook it. I have cooked it on high for as little as 5 hours, or cooked it on low for as many as 10 hours. Sometimes I serve it over brown rice, or wide noodles. Top with a little sour cream or cheddar cheese and you have a great meal that couldn’t be easier. Plus, you don’t have a ton of dishes to wash either!
