Chia seed, banana, oat, chocolate chip muffins

It’s been a while since I’ve made muffins! I forgot how much I love them and how easy it is to grab that for breakfast out the door.

I had a bag of chia seeds and I thought I wanted to add those to muffins. I quickly googled “chia seed muffins” and made mine based on a recipe from www.choosingraw.com.

These are more dense muffins, not cake like – but delicious just the same. I would heat it up at work in the microwave, open it up, smear a little peanut butter on top of each half and it was amazing!

Jenn’s Chia Seed Banana Oat Chocolate chip muffin

Preheat oven to 350 degrees

Ingredients:

2 tablespoons wheat germ
1 cup whole wheat flour
1 cup all purpose flour
1 cup oats
1.5 tsp. baking soda
1/4 tsp. salt
1 tsp. cinnamon
2 bananas, peeled and mashed
1 1/4 cup skim milk
1/8 cup canola oil
1 egg
1/4 cup sugar
1 tsp. vanilla extract
3 tablespoons chia seeds
1/4 cup chocolate chips (plus some placed on top before baking :))

Using a 1/4 cup measure I filled the 12 muffin tin (coated with cooking spray first). Bake for 20-25 minutes or until a toothpick comes out clean.

For each muffin: 206 calories, 5.4 grams fat, 34 carbs, 3.4 fiber

Have you ever used Chia seeds? You can add them to pancake or waffle batter, add them to smoothies, sprinkle over yogurt. You can find them in health food stores or Whole Foods or Trader Joe’s.
