So, since I had no plan yesterday, I ran to Whole Foods at lunch and I was going to get a salad, but when I was walking the aisles, I saw the Amy’s frozen lunches. I saw the tortilla bowl and looked at the nutritional information. Not bad! 380 calories, 18 grams of fat and 9 grams of fiber. I also picked up a bag of Guiltless Gourmet Tortilla Chips. I’ve never tried them before, but what I liked was that you got 18 chips per serving at 120 calories per serving.

So Good!!!

And it’s weigh in Friday again! The weeks are flying by.

I was EXACTLY the same!! I always think that’s weird when you work out differently, eat different things, yet stay the same… but hey, I am glad its not up!

Today is going to be a challenge at work. We have our annual Turkey Day Potluck. With 50 people bringing food, grilling out burgers and brats, its going to be hard. But, a bunch of people play tag football afterwards, and I am going to play and burn some calories!

I am bringing turkey meatballs.

This is the recipe. One of my coworkers brought this last year and they were amazing!

GRAPE JELLY MEATBALLS

2 12 oz jars Heinz chili sauce
1 32 oz jar grape jelly
1 bag meatballs (about 80 in a bag)
Put chili sauce and jelly in a large pot, heat until jelly is melted and sauce is smooth, stirring often. Add frozen meatballs; heat until meatballs are thawed and then simmer for 3 hours.

I know it sounds disgusting, but trust me, they taste AMAZING. These will be simmering at my desk all morning in my crock pot before the party so I am going to have to be strong and not eat a ton before it even starts!

Very veggie beef stew

I know what you are thinking…Jenn there is beef in beef stew, why do you call it very veggie beef stew?

I’ll tell you why! Last week, I made my very veggie pasta sauce by adding a bunch of extra veggies in my blender and pureed the heck out of it. No one knew! (until I told them afterwards!)

So, as I was making my beef stew tonight I thought what if I try the same thing??

I did my quicker version where I peel and dice potatoes, peel and dice carrots, and dice celery. I put that in a microwave safe bowl and cooked until the veggies were fork tender.

Meanwhile, I cut the beef stew meat in bite size pieces and coated them with flour (it makes the meat more tender that way). Brown the meat in a big pot.

Now for the sauce, I use 3 cans of V-8 juice. (12 oz. cans)

But before I added the V-8 juice to the pot, I added one can into a blender and then looked to see what other veggies I hadn’t used this week. I had 1/2 a cauliflower, 1 red pepper, 1 tomato, 1/2 an onion, some garlic and a zucchini! I put all those veggies into the blender and liquified them so there was no trace of any veggies!

Add the 2 other cans of V-8 juice to the pot, and add the pureed veggies from the blender. Now add the cooked carrots, potatoes and celery you cooked in the microwave. Add some salt and pepper, a little crushed red pepper flakes and a little oregano.

That’s it! It was SO good, and I felt great getting more veggies in!

Very veggie beef stew

Now, everyone except me had seconds….except for my younger son Mark. He doesn’t like my beef stew and I do sometimes always make him something else if he doesn’t like what I am making

I looked in my freezer and had forgotten that I had bought these to make for my lunch one day this week.

Turkey burgers

These turkey burgers come individually wrapped and you don’t have to defrost them before you cook them. They go straight from the freezer to the grill or skillet! Each patty is only 190 calories and 7 grams of fat. Has anyone else tried these before? I took a bite of his and I thought it tasted really good!

0 point soup + great lunch! + Weigh in Friday

First of all, today was my very first weigh in after joining Weight Watchers on-line and really keeping track of points. I love the on-line version, its so easy to enter in what you eat, save foods as favorites and I love the recipe builder where you enter all the ingredients of a recipe and it will tell you how many points it is. For some reason, counting points vs. counting calories is so much easier for me! Are you ready???? Drum roll please……….I lost 4 pounds this week! Wahoo!! SO, I would say that’s a good start for me! Hopefully I can keep it going!!

Now on to today’s post!

I really wanted to make my sister’s roasted red pepper soup but when I got home, I realized I didn’t have quite all the ingredients, so I just kind of made my own!

Here’s my 0 point soup:

4 cups chicken broth
1 green pepper, charred on the stove, remove seeds and put it in the soup, (do not remove the blackened part)
1 garlic clove
2 carrots
1/2 onion
1 medium russet potato, peeled and chopped
1 jalapeno (seeded and chopped)

In a medium pot, just cook all the veggies until they are soft. Then I transferred it to the blender and pureed the whole thing.

It was spicier than I thought it would be, so maybe next time I would use only half the jalapeno!

I made a low carb pita turkey pastrami with lite swiss cheese, broccoli slaw, honey mustard and pickles. That turned out to be 7 points, so I decided to cut it in half for 3.5 points

Accessorizing my lunch, was 1 kiwi, a few sugar snap peas, a pile of green beans and my soup. 4.5 points for all this food! I was super stuffed after all this!
