<p>I&#8217;ve tried their cereal before, but was really impressed with the recipes you can make with them.  All of their cereals are high in fiber.  In fact the<br />
cereal pictured below has tons of fiber to keep you fuller longer!  Studies show that people who eat a high fiber diet including fresh fruits and veggies lessen their risk for cancer, diabetes and obesity.</p>

<p>So, you know how I love muffins, using their cereal, I found this recipe from their web site that turned out really good!</p>
<p>The Original All-Bran™ Muffins</p>
<p>Preparation Time: 20 minutes<br />
Total Time: 50 minutes<br />
Servings: 12<br />
Ingredients</p>
<p>1 1/4	cups all-purpose flour<br />
1/2	cup sugar<br />
1	tablespoon baking powder<br />
1/4	teaspoon salt<br />
2	cups Ready-To-Eat Cereal All-Bran® Original<br />
1 1/4	cups fat-free milk<br />
1	 egg<br />
1/4 cup	 vegetable oil<br />
Directions<br />
1. Stir together flour, sugar, baking powder and salt. Set aside.</p>
<p>2. In large mixing bowl, combine KELLOGG&#8217;S ALL-BRAN cereal and milk. Let stand about 2 minutes or until cereal softens. Add egg and oil. Beat well. Add flour mixture, stirring only until combined. Portion evenly into twelve 2 1/2-inch muffin pan cups coated with cooking spray.</p>
<p>3. Bake at 400° F about 20 minutes or until golden brown. Serve warm. </p>
<p>Each Muffin is 160 calories, 5 grams of fat and 4 fiber.</p>
<p>*You can also add a few mini chocolate chips to it! </p>

<p>OK, tonight&#8217;s show was awesome!  I always get teary eyed with Oneal and Sunshine!  I thought for sure when Oneal fell he broke his leg or something and then to have his brother pass away too?  I felt super bad for him but glad he lost 8 pounds!</p>
<p>And, I didn&#8217;t think it was a bad idea for Koli to try to win the challenge so his cousin Sam could stay, because they work out like fiends and I knew Koli could still lose weight, which of course losing 10 pounds in week 14 is amazing.</p>
<p>And when Sunshine only lost 1 pound and so did Victoria, I knew Koli would send Victoria home.  What I was most surprised about was Victoria&#8217;s Mom, I didn&#8217;t even recognize her she lost so much weight and she looked so much younger!</p>
<p>So, I my guess is that either Sam will win the whole thing or Daris&#8230;who do you think will win the whole thing?</p>

<p>Just in time for St. Patty&#8217;s day, I made my first loaf of Irish Soda bread over the weekend.  I had no idea how easy it is to make!  </p>
<p>I googled Irish Soda bread and ended up choosing a recipe from <a href="http://www.epicurious.com">Epicurious</a>.  The list of ingredients is pretty short:  This recipe makes 2 loaves, or you can cut it in half and make just one loaf.  But, one loaf didn&#8217;t last that long in my house, so you&#8217;d better make 2!</p>
<p>Ingredients</p>
<p><em>I don&#8217;t even know where to get bread flour, or what that is, so I just used all purpose flour</em></p>
<p>4 cups bread flour<br />
1 tablespoon double-acting baking powder<br />
1 teaspoon salt<br />
3/4 teaspoon baking soda<br />
1 cup raisins or dried currants, rinsed in hot water and patted dry*<br />
1 tablespoon caraway seeds*<br />
2 cups buttermilk </p>
<p>*I didn&#8217;t put in the raisins or currents or caraway seeds, and it still turned out great!</p>
<p>Preparation:<br />
Into a large bowl sift together the flour, the baking powder, the salt, and the baking soda and stir in the raisins and the caraway seeds (if using). Add the buttermilk and stir the mixture until it forms a dough. Turn the dough out onto a well-floured surface and knead it for 1 minute. Halve the dough, with floured hands shape each half into a round loaf, and transfer the loaves to a lightly greased baking sheet. Cut an X 1/4 inch deep across the tops of the loaves with a sharp knife and bake the loaves in the middle of a preheated 350°F. oven for 45 to 55 minutes, or until a tester comes out clean. Transfer the loaves to racks and let them cool. </p>

<p>So, I did a google search, got some ideas and went from there.</p>
<p>Jenn&#8217;s Fajita Seasoning Mix</p>
<p>2 TB. chili powder<br />
1/2 TB. salt<br />
1 TB. paprika<br />
1 TB. sugar<br />
2 tsp. chicken boullion (crushed cubes or powder from a jar)<br />
1 tsp. onion powder<br />
1/2 tsp. garlic powder<br />
1/2 tsp. cayenne pepper<br />
1/2 tsp. (or more!) or crushed red pepper flakes<br />
1 tsp. ground cumin</p>
<p>Mix together in a bowl.</p>
<p>Heat 1 1/b pounds of boneless skinless chicken breasts, cut into cubes into a big skillet.  About half way through cooking, add 3 TB. of the fajita marinade and 1/2 cup of water.  </p>
<p>I cook the peppers in a separate skillet, because some of my kids don&#8217;t like that combo.  I used the Trader Joe&#8217;s tri-peppers that come frozen.  So easy!</p>
<p>The result?  So good!  I will NEVER buy store-bought seasoning again, this was so flavorful, a little spicy, but we all loved it!</p>

<p>·         3 Tbsp. Organic or natural low fat mayonnaise</p>
<p>·         2 Tbsp. Organic or natural low fat sour cream</p>
<p>·         1 tsp. Fresh lime juice</p>
<p>·         1/8 tsp. Worcestershire Sauce</p>
<p>·         1/2 tsp. Onion powder</p>
<p>Whisk all ingredients together in a small bowl. Use as a dip for vegetables such as celery, carrots, bell peppers, broccoli, cauliflower, and cucumbers.</p>
<p>This dip can also be used as a sauce over steamed vegetables &#8211; great with asparagus or broccoli.<br />

<p>·         2 Tbsp. Organic or natural nonfat vanilla yogurt</p>
<p>·         1 cup Crushed ice</p>
<p>Place all ingredients in a blender. Blend until smooth.</p>
<p>For an indulgent treat add any of the following:</p>
<p>2 Tbsp. Chocolate syrup<br />
1 Tbsp. Chocolate chips</p>

<p>·         4 Multigrain tortillas</p>
<p>·         12 oz. Broiled chicken breast strips</p>
<p>·         2 to 3 Slices, red onion</p>
<p>·         Packaged shredded carrots</p>
<p>·         Cilantro leaves</p>
<p>·         Lettuce leaves</p>
<p>Sauce:</p>
<p>·         1 Tbsp. MaraNatha No Stir Almond Butter, Creamy</p>
<p>·         1/2 cup Organic or natural light mayonnaise</p>
<p>·         1/4 cup Organic or natural light sour cream</p>
<p>·         1 tsp. Fresh grated ginger</p>
<p>·         1/2 tsp. Garlic powder</p>
<p>·         2 tsp. Sesame oil</p>
<p>·         1 1/2 tsp. Rice vinegar</p>
<p>·         2 Tbsp. Cilantro, finely chopped</p>
<p>Place all ingredients in a medium size bowl. Whisk until smooth.</p>
<p>Place large tortilla on flat surface and cover with green leaf lettuce. Spread 2 &#8211; 3 tablespoons sauce over lettuce. Place grilled chicken breast, shredded carrots, red onion slices (to taste), and 8 to 10 cilantro leaves. Fold in sides of tortilla and roll</p>
<p> Don&#8217;t these recipes look fantastic?  I received two free jars of the almond butter and regular natural peanut butters and they are both wonderful.  You need to refrigerate them after opening and kind of stir them up before each use. </p>

<p>So, this is what I made for my breakfast:</p>
<p>1 cup cooked quinoa<br />
sugar snap peas<br />

1 egg, which I &#8220;fried&#8221; in Pam cooking spray and chopped up<br />
your favorite stir fry sauce</p>
<p>I cooked the egg first, then chopped and put back into the skillet, add the cooked quinoa and the onion and sugar snap peas and cook for several minutes.  Add whatever stir fry sauce you like, and you are ready to go!  </p>
<p>*Quinoa takes only 6 minutes in the microwave to cook, so you can easily make this before starting your day.</p>
<p>Doesn&#8217;t that look good?!  I haven&#8217;t figured out the calories yet, but I am assuming its around 375 for this whole skillet!  </p>
