Back to school! + Stove top 5 cheese mac and cheese

The summer is over, and my kids head back to school today!!!

The weirdest part is my oldest son is starting high school today, the same high school that my husband and I went to!

It seems like it was yesterday when they were this small:

Claire was in pre-school, Mark in 1st and Paul in 3rd

Here’s my oldest son Paul leaving for high school

Paul/Freshman!

And next to leave for school is Claire! She’s been so excited for school to start! She was counting down the days. 3rd grade rocks!

3rd grader Claire!!

She's going to have a great day!!

And last, but not least, Mark is a 7th grader this year!

Mark/7th grader!

I hope they all have a great day!!

Now onto my stovetop mac and cheese with sausage!

I used this instead of ham

Ingredients:

1 TB. butter or margarine
1/4 cup flour
3 1/2 cups skim milk
3 cups uncooked macaroni
squirt of brown mustard
salt and pepper
5 oz. cheese of your choice

In a large pot, cook macaroni and set aside.

In a medium size pot, melt the butter and add the flour and cook for about 2 minutes, stirring constantly. Add the milk, the salt and pepper and brown mustard and cook for about 10 minutes on low heat until thickened and bubbly. Add the cheese and stir until the cheese is melted.

Adding the cheese for the cheese sauce

In the larger pot, which has the drained elbow macaroni, add the cheese sauce and sausage and stir together. Cook for a couple of minutes until the sausage is warm.

My serving!

I added a little gorgonzola on top as well as sprinkled with a little paprika.

This is the cheese I used, fiesta blend 4 different kinds of cheese

It was delicious and I didn’t have to heat up the kitchen by baking it in the oven.

  1. You got me at mac-n-cheese…I’ve made so many variations, but have never thought to put kielbasa in it…yum!

  2. Your kids look so happy to be going back to school…what gives?!? ;)

  3. Time flies doesn’t it?

    Mmm…Mac and cheese!

  4. The mac and cheese looks awesome! I LOVE homemade mac but my kids prefer Kraft. Freaks.

We still have 2 weeks until school starts. Is Minnesota the only state that doesn’t start until after labor day? It seems like EVERYONE is starting in August. Of course, you all get out earlier.

  5. Wow, I never ever counted down for school to start. I was always the kid in denial, thinking I had weeks of summer left.

Love Mark’s Dunder Mifflin shirt! :)

Yummy, home made mac n cheese is a favorite of mine! My mom always makes the best and puts ham in it.
