  I mentioned that I found the grilled chicken strips at Aldi.  (Look under April 2008 Archives and find the post called “Food Finds”).  I had some chicken strips left so I decided to make a stir fry.  I love stir fry’s because you can eat a ton of veggies and it takes a long time to eat.

  • 3 ounces grilled chicken strips
  • 1/2  cup whole wheat angel hair pasta
  • 1 1/2 cups mixed veggies
  • 1 tablespoon dried soy nuts
  • 2 tablespoons stir fry sauce

Just mix it altogether and I heated it up in the microwave for 2 minutes.  The stir fry sauce I used today was Teriyaki.  For two tablespoons its only 70 calories, and so yummy.  They have Saigon Sizzle, Classic Stir Fry, Peanut Sauce etc…  You can find them in the Asian section of your super market. A huge bowl of food for approx. 330 calories, 3 fat and 5 fiber!
