Awesome Jumbo Low-Cal Yummy Chocolate Chip Muffins
One of the things that is hard when you are losing weight is actually changing your lifestyle. Every time you read about people who want to lose weight, they say, “Change your lifestyle!” But how? I think this time around I am going to try to change my lifestyle a little at a time. One of those things is giving up big huge muffins from the bakery on my way to work. I LOVE huge muffins, Lemon Poppy-seed, Double Mocha Chocolate, Coffee Cake. The bad thing about my love of these muffins is actually the calories and fat that accompany them. So, I decided I wanted to try to make Jumbo muffins from scratch to replace my bakery habit. I googled “Low fat Jumbo Muffins” and to my surprise I found a lot of recipes. I tried a bunch. Some tasted like cardboard, some were not sweet enough, or it just didn’t fix my craving. I happened across this girl’s food blog and found a recipe I couldn’t wait to try. Jumbo Chocolate Chip Muffin? Was I reading that right? The calories seemed to low, but I had to try it. I baked a batch actually before I went to work, and when I got to work and tasted it, I was in heaven. I had found my replacement to the fatty, bakery muffins! I did adjust a few things, I lessened the amount of oil and brown sugar and added a little honey. Here is the recipe:
- 1 1/3 cups whole wheat flour
- 2/3 cup all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. salt
- 1 whole egg, plus 1 egg white
- 1 cup fat free plain or vanilla yogurt (I used vanilla)
- 1 tb. canola oil
- 1/2 cup skim milk
- 1/4 cup brown sugar
- 2 tsp. vanilla extract
- 1/2 cup (or 50 grams) semi sweet chocolate chips
- 2 tb. honey
Basically, I just threw all the ingredients in the same bowl, stirred with a spoon for a few minutes, making sure everything was well mixed. I sprayed a 6 Jumbo Muffin tin with Pam cooking spray, and divided the batter evenly between the muffins. Bake at 350 degrees for about 15-20 minutes, until a toothpick inserted in the center comes out clean. I even drizzled about a teaspoon of honey on top of each muffin before I baked it. You will definitely love these and add them to your breakfast routine. Now as I drive by the bakery in the morning I say “I don’t need you anymore!” It’s a start. I hope you enjoy them. Each Jumbo muffin is 256 calories 6 fat and 3.2 fiber. How did I figure out the calories? I went to www.calorieking.com and entered in each ingredient and then divided by 6. It only takes a few minutes, and once you use the same recipes over and over again, you always will have the calorie count!
