Accessorizing my lunch

Believe it or not, I didn’t go to the grocery store this weekend!  I was super busy around the house, my kids had friends over, my daughter had a birthday party to go to.  I thought it was a good time to eat out of my freezer!  I sometimes (a lot of times!) put things in the freezer, and by the time I take it out, I have no idea what is was, so it goes in the garbage!  I actually have a small freezer in my basement, which I thought was empty because we had a power outage a few months ago where we had no power for three days and I had to throw everything out of there.  Well, I happened to open it last night, thinking there was nothing in there and I had salmon, and chicken breasts, and french fries.  Score!  I made the chicken last night with brown rice, nothing fancy.  So when I was thinking about what to make for my lunch today at work, I really didn’t have that many veggies at all.  So I took 1/4 of a red onion, sliced it up, a clove of garlic, and sauteed that in a skillet, I added 1 cup of brown rice and about 3 ounces of the chicken left over.  I have my favorite stir fry sauce at work, Thai peanut sauce.  What can I do for the veggies??  Then it came to me, there is a restaurant around the corner from my office with a salad bar, and for a few dollars, I can add broccoli, carrots, celery, alfalfa sprouts, corn, etc…  So, that’s my plan. Once I get the veggies, I’ll add it to the stir fry I already brought, heat it up, add the stir fry sauce and I am good to go! *Update, my accessorizing cost all of $1.36.  I got red beans, garbanzo beans, red and green peppers, corn, alfalfa sprouts, asparagus.  My lunch is so deluxe!!  I also put cauliflower in there and maybe its because of the stir fry sauce, but I like it a lot!! My Mom would be so happy!!

I also spent some time this weekend on www.couponmom.com.  She was on the Oprah show a few weeks ago and she saves like 75% off her groceries by knowing how to buy and when.  I learned a few tips and she has tons of coupons on line that you can print out.  With the price of food skyrocketing, it was totally worth it to help save money.
