90 second microwave chocolate cake

I’ve been doing so great lately staying away from desserts – especially at work. The other day I got there and there was a whole Portillo’s chocolate cake on the counter – really?

And I haven’t touched any girl scout cookies at my house or at work either. But last night I REALLY wanted to have dessert. And then I thought about the No Pudge brownie mix that you could make 1 serving of in your microwave. I didn’t have any of that so I was wondering if I could just make it from scratch. I read a lot of recipes, most of which were not so healthy. I didn’t want to make a 500 calorie special treat, so I adapted it a little from several recipes with what I had on hand.

The result? Awesome – totally chocolaty, fudgey, and really hit the spot. The best part? This was only 239 calories, 5 grams of fat, 3.7 grams fiber, and 5.6 grams of protein.

Ingredients for ONE serving

2 tablespoons flour
1 tablespoon sugar (I would have tried sugar free sweetener if I had some) that would save 49 calories
1/4 tsp. baking powder
2 tsp. cocoa
pinch salt
1 tablespoon skim milk
2 tablespoons fat free vanilla yogurt (or whatever flavor you have on hand)
3/4 tsp. Canola or vegetable oil
1/4 tsp. vanilla extract
half banana – mashed
1 tsp. ground flax seeds

In one bowl, add all the dry ingredients and mix well. In a second bowl add all the wet ingredients and mix well. Add the wet ingredients to the dry ingredients and stir together – it will look exactly like cake batter.

I used a coffee mug, spray with cooking spray – add the batter and cook in the microwave for 1 minute. Depending on your microwave it may be done at this point – mine looked a little wet in the middle so I cooked it for 30 seconds more (I have a 1,200 watt microwave).

It kind of puffs up in the microwave and I am not going to lie, I was super excited about it! 🙂 It’s super chocolaty – kind of rich and fudgey on the inside – it really hit the spot and satisfied my craving for dessert and the best part is there was only one serving.

    First, nice job avoiding the chocolate cake at work – you’ve really done great with not falling into the dessert temptations that are all around you! And secondly, your individual cake sounds yummy AND I love that it’s one serving…no leftovers to snack on. 🙂
